I am a former chef and worked for over 20+ year in hotels, and the food served to guests in there rooms are the same dish served to diner's in the dining rooms and coffee shops, portions are the same, plate decoration the same, prices may vary for the room service waiters are paid a different scale some times.
You can get the same items as the restaurants serve, but at a wider range of time, and we used to sell whole pitchers of juices, milk and some other foods that the restaurants could not and carafes of coffee, as they cannot be running to your room to freshen your cup up.
The first person is right they set the carts up, these have expandable leaves the ones that come up and form a round or square table, the hot box is just an small compartment with a heat source, some have plug in ones and some use the alcohol sterno pots to keep the food warm up to the room, and they use the standard metal plate covers to keep the food from drying out, sauces are usually served on the side so they do not slosh around in the elevator or rolling down the hallways to your rooms.
